Scandinavian Almond Cake

A delicious sweet almond cake that serves as a uniquely satisfying dessert.

1 2/3 Cups all purpose flour, (plus 2 T. altitude)
1 ½ Cups sugar
1 Cup butter, melted
1 Large egg, lightly beaten
2 T. almond extract
¼ tsp. salt
Cooking – oil spray
1 cup sliced almonds

Scandinavian Almond Cake


Preheat oven to 350. In a large bowl, stir together flour, sugar, butter, eggs, almond extract, and salt. Coat two 9 in. pie pans with cooking spray. Divide batter evenly between pans and sprinkle each with half of the almonds. Bake until light brown around edges, about 30 minutes.
Serve at room temperature. Makes two cakes
