Pumpkin Soup

 Rich and Creamy Pumpkin Soup is a great autumn tradition.

48 ounces solid packed pumpkin or 100% Pumpkin
2   large shallots
1.5 T butter
1    t minced garlic
1/4  cup sugar (brown or white)
1/8   t cloves
1/4 t ginger
1/4 t cinnamon
dash nutmeg
1 t pepper
1/8 cup chicken or vegetable base
3 cups water
1 cup heavy whipping cream

Pumpkin Soup


Saute the shallots and minced garlic until caramelized. Then add to pumpkin. Add the rest of the ingredients and cook for 15 minutes. Burr until smooth using the Viking hand Blender. Then add heavy whipping cream and bring to a soft boil. Can be topped with fried wantons tossed with cinnamon and sugar.
