White Chocolate Macadamia Cookies

These soft and chunky cookies are a delight! Add craisins to make a colorful treat.

4 cups butter softened
4 cups of sugar
3 cups light brown sugar, packed
3 Tbs vanilla
2 tsp salt
8 eggs
10 cups all purpose flour
4 tsp baking soda
40 oz white chocolate (chips or chunks)
4 cups macadamia nuts

White Chocolate Macadamia Cookies


Preheat oven to 375 degrees.

In a large bowl, beat butter granulated sugar, brown sugar, vanilla and salt in an electric mixer until creamy.  Add eggs, beat well.  Stir together flour and baking soda and gradually add to butter mixture beating until well blended.  Stir in white chocolate chips and macadamia nuts.  Drop by rounded spoon onto ungreased cookie sheet.  Bake 8-10 minutes until set.  Cool slightly and remove to a wire rack to cool completely.
