Gazpacho Chilled Soup

This Satisfying and refreshing soups is full of flavor and very good for you.

4 tomatoes (diced)
2 peeled and diced cucumbers
2 green onions (diced)
2 jicamas (diced)
2 diced celery stalks
2 avocados (diced)
2 tsp. salt
1/2 tsp. pepper
4 tbsp. vegetable or olive oil
1/2 cup red wine vinegar
4 (12 oz.) cans of tomato juice
Chopped chives for garnish

Gazpacho Chilled Soup


In a large mixing bowl, combine the first 6 ingredients and sprinkle with salt and pepper.

Combine the oil, vinegar, and tomato juice and mix with the vegetables.

Cover the mixture and refrigerate at least 5 hours or overnight. Garnish the soup with chives if desired. Serves 12-16 people.
