Caesar Dressing and Salad

A delicious homemade caesar dressing.

7 Eggs
1.5 teaspoon Salt
9 dashes Worcestershire Sauce
2 tablespoons Minced Garlic
1 jar Dijon or Grey Poupon
Juice from 2 lemons
1 tablespoon Anchovy Paste
4-6 cups Canola Oil

Caesar Dressing and Salad


In a mixer start with eggs and add one ingredient at a time, adding the canola oil last. Drip the canola oil in at a steady pace until thick. Taste to see if you need any additional lemon juice, mustard or salt. Will last up to 2 weeks in refrigerator. Serve with chopped Romaine or Romaine wedge. Toss with Parmesan cheese and croutons. Serve immediately.  Makes approximately 2 quarts.
