Florentine Cookies

Thin crunchy cookies.

2/3 cup butter
2 cups quick oats (uncooked)
1 cup sugar
2/3 cup all purpose flour
1/4 cup corn syrup
1/4 cup milk
1 tsp vanilla
1/4 tsp salt
Florentine Cookies



Preheat oven to 375 degrees.
In a large pan melt the butter and stir in oats, sugar, flour, corn syrup, milk, vanilla, and salt.
Mix well and drop by level teaspoons onto a foil-lined cookie sheet. Spread thin with a spatula or the back of a spoon. 
Bake for 5-7 minutes or until browned. Cool on a wire rack before peeling away the foil. Melt the chocolate and spread on one half and stick another to it.
