Marinara Sauce

This great homemade pasta marinara sauce is made to impress and can be poured over any type of pasta you please

1 medium to large onion
1/4 cup garlic (brunoise)
1 Tbs canola oil
1 can #10 diced tomatoes
1/4 pound vegetable base or chicken base
26 ozs of water
1/4 bottle Chianti (optional)
1/4 cup fresh basil (chopped)
1/8 cup dried basil
1/8 cup dried oregano
1 bay leaf
1/8 cup fennel powder
1 tsp baking soda
1/8 cup sugar
3/4 cup tomato paste
1/4 cup corn starch (mix with water and stir in)

Marinara Sauce


Saute onions, garlic, canola oil in a large soup pot for approximately 8-10 minutes on medium heat or until onions are transparent.  If you are using wine, add it and reduce.

Add diced tomatoes, water, spice, vegetable base, baking soda, and sugar.  Bring ingredients to a boil - reduce heat and simmer 2-3 hours.

Add corn starch and water, simmer for 10 minutes.   Add tomato paste and simmer for an additional 10 miniutes. Check seasoning and consistency.
