Chicken & Rice Soup

Delicious hot chicken and rice soup with vegetables.

6 Sautéed chicken breast - diced
4 Tbs butter 
1/3 cup Chicken base
3 quarts water
1 cup dried Rice
2 Carrots
4 Celery sticks
1 medium brown Onions - diced
White Pepper to taste 
Chicken & Rice Soup



In large fry pan melt butter, season and flour chicken breast and sauté chicken until cooked through. Let chicken rest for five minutes and cube.  Bring 3 quarts of water to boil, add chicken base, onion, celery, and carrots.  Boil for 15 minutes. Add butter from cooked chicken into the water mixture and add cubed chicken.  
Let simmer for 15 minutes. 
Cook rice in a rice cooker.  Add rice to soup just prior to serving.
