Delicious Candied Almonds

3 Egg whites 
1 cup sugar
1 pound Blanched Sliced Almonds
4 oz butter
1 t chili powder
1/4 t cayenne pepper
Candied Almonds


Melt the butter in 1.2 sheet pan or a 12” x 7” cookie sheet. Whip the egg whites about half way, until frothy but not stiff. Fold the sugar into the eggs and add the chili powder and cayenne. Fold the almonds into the mixture. Pour the almonds into the pan with the butter. Put in the oven and cook for 8-10 minutes. Take out and stir with a spatula. Put them back in for another 8-10 minutes. Take the almonds out and stir again. Repeat the cooking and stirring until the  almonds are brown dry (but not to brown). Let cool and store in ziplock bags. Almonds will keep for about 1 week or they can be frozen for about 1 month. (To defrost spread on a cookie sheet and bake for about 3-4 minutes.)
