Almond Crescents

Crescents shaped almond cookies.

1 cup Blanched Almonds
1/4 t Salt
1/2 cup Granulated Sugar
1 cup Butter
2 cup Flour
1 t Almond Extract
1/2 t Vanilla Extract
3/4 cup Confectioners Sugar

Almond Crescents


Place almonds on a baking pan and bake at 350 degrees for 8 to 10 minutes or until lightly toasted. Cool completely.

In a food processor blend almond with salt and 1/4 cup granulated sugar until almonds are finely ground. In a large bowl beat butter and remaining 1/4 cup granulated sugar until blended. Beat until light and creamy. On a low speed gradually beat in flour, almond extract, vanilla, and ground almond mixture. Divide the dough in half. Wrap each half in plastic wrap and refrigerate for 1 hour or until dough is firm enough to handle.

Lightly flour your hands to shape the dough. Using rounded teaspoons shape the dough into 2” x 1/2” crescents. Bake on a cookie sheet about 1 inch apart for 20 minutes or until lightly brown around the edges. Transfer immediately to a wire rack and cover with confectioners sugar until well coated. Cool completely.
