Carrot Muffins

Soft Carrot Muffins that are great for breakfast or a snack or make it a dessert topped with Cream Cheese Frosting!

8 eggs
3 cups canola oil
4 cups sugar
4 tsp vanilla
6 cups grated carrots
6 cups chopped walnuts
4 cups of flour
2 tsp salt
4 tsp baking soda
3 Tbs cinnamon

Carrot Muffins


Preheat oven to 350 degrees.
In a mixing bowl, mix eggs, oil, sugar, vanilla, grated carrots and walnuts until blended.
In a separate bowl, mix flour, salt, baking soda and cinnamon.
Mix the wet and dry mixtures until fully combined.
Pour into cupcake cups.
Bake at 350 for 15-18 or until done in the center.
