Cheesy Potato Souffle

A pleasing and flavorful baked cheese and potato dish.

10 large russet potatoes
8 ounces of butter
1 large brown onion
1 cup of half & half
1 pound cheese of your choice, grated
1 Tb. salt
2 teaspoons white pepper

Cheesy Potato Souffle


Preheat oven to 350 degrees.
Peel and cut potatoes. Boil until tender then drain well and mash and add butter, onion, half & half, salt, and pepper. When mixed well, fold in cheese. Whip in mixer on high until smooth and fluffy. Put in buttered ramekins and place in oven for 30-45 minutes. Take out and serve immediately.
