Mr. LeCroy’s Fresh Apple Cake

A fresh and fabulous take on the classic Fresh Apple Cake from Bob LeCroy, Former Executive Chef and Owner, Log Cabin Restaurant, Big Bear Lake, CA

12 cups fresh apples, pared and diced
6 cups granulated sugar
12 oz cups butter
3 cups chopped nuts
8 eggs
3 tsp salt
6 tsp vanilla
7 cups flour
2 tsp baking soda
6 tsp cinnamon
8 oz. cream cheese
4 oz butter
1 tsp vanilla
1 pound powdered sugar
Mr. LeCroy’s  Fresh Apple Cake



Preheat oven to 400 degrees.
In a large bowl mix, apples, butter, vanilla, sugar and eggs.  In a separate bowl, mix flour, salt, baking soda, nuts and cinnamon.  Combine mixture into one large bowl - you may have to mix with your hands because the texture is sticky.  Place mixture in three 9X13 pans.  Bake at 400 degrees for 45 minutes.
