Chicken Artichoke Pasta

A pasta with a unique and satisfying chicken and artichoke sauce, with a touch of vodka, sure to please the taste buds!

1 T Oil or butter
1 T garlic
2 1/2 cup shallots
1 qt orange juice concentrate
2 qt half and half
1 1/4 cups rich chicken base
 8 oz corn starch
 1 1/4 gallons cold water

Chicken Artichoke Pasta


Add shallots to a heavy duty pot with garlic oil over medium heat and sauté for 8 to 10 minutes or until the shallots are transparent. Add the garlic and stir for a minute or two (Don’t brown). Add water, cream and chicken base then bring to a simmer for 15 to 20 minutes. Add corn starch with water and bring to a simmer for 10 minutes. Add orange juice and stir, then bring to a simmer for 7 minutes. Strain through a fine sieve for a smooth sauce

 Vodka Collins, Artichoke Bottom Sauce:
Pour 1 cup of Citrus Beurre Blanc per person in an appropriate size sauce pot and bring to a rolling simmer. The sauce has to be rolling when you add the Vodka or it will separate!!! Add ½ ounce of vodka per person, a little at a time so the sauce will still roll and add ½ cup of artichokes per person to the sauce pot. Stir all together and the sauce is ready to serve. Add to the pasta of your choice.
