Chilled Cucumber Soup

Light and tasty chilled soup made with cucumbers.

10 cucumbers
6 ounces of cream cheese
1 1/2 cup sour cream
1/2 gallon of whole milk
1/2 cup chives
Salt and pepper to taste

Chilled Cucumber Soup


Peel the cucumber and remove the seeds. Chop and puree in food processor. Place in a bowl and set aside. Let the cream cheese come to room temperature and blend in food processor until smooth. Add the sour cream and continue blending. Chop chives and add milk and salt and pepper to taste. Mix together and chill in a refrigerator for one hour. Will last 4-5 days.
