Lemon Curd

A thick, soft and velvety cream that has a wonderful tart yet sweet citrus flavor that can be used as a filling or topping.

4 whole eggs
2 pounds 3 ounces of sugar
15 lemons (zested)
35 yolks
2 1/2 cups of lemon juice
1 1/4 pounds of butter

Lemon Curd


In a large mixing bowl, mix all of the ingredients together. Place the mixture over a double boiler and stir every 10 to 15 minutes. The mixture will take about 30 to 45 minutes to thicken. Strain in a sieve and cool before placing in the refrigerator. You can substitute lime in place of the lemon.
