A vegetarian dish of Lebanese Lentils and Rice served with salad and a special dressing.

1 Medium onion
1 Cup lentils
1/4 Cup rice
1 teaspoon salt
1/2 teaspoon cumin
4 cups of water
3-4 T oil (to saute onion)



Boil lentils and rice till soft then put in blender and purify. Sauté the chopped onion in oil, mix together and boil on medium heat. Stir constantly, add salt and cumin.

This vegetarian dish is served with salad.

The salad dressing that compliments the dish is :

2 cloves of garlic
1/2 teaspoon of salt
1/2 lemon
5 tablespoon of extra virgin olive oil

Crush the garlic in mortar and pestle with salt. Add oil and mix the lemon juice.
