Pumpkin Cobbler

A tasty cobbler with pumpkin drizzled with caramel is a pleasing dessert.

20 oz Can pumpkin
1 cup granulated sugar
2 T cinnamon
1 1/2 tsp Ginger
1 1/2 tsp Nutmeg
12 oz evaporated milk
3 eggs beaten
3 cups chopped nuts (optional - pecans are best)
1 cup raisins (optional)
1 cup melted butter
1 box yellow cake mix

Pumpkin Cobbler


Preheat oven to 350 degrees.

Mix pumpkin, sugar, cinnamon, ginger, nutmeg, evaporated milk, raisins, and egg well.
Pour mixture into a 9 x 13 baking dish. Sprinkle cake mix evenly covering the entire top of the pumpkin mixture. Take your fingers and make imprint throughout the entire mixture for butter to settle into. Top with nuts and pour melted butter over entire top.

Bake at 350 degrees for one hour or until brown.

Drizzle with caramel.
